Pico di Gallo – Stir into black beans and rice, on top of romaine lettuce for a salad, with chips
Ingredients:
- Tomatoes, ripe garden or hot house, chopped - 2 each
- Red onion, minced - 2 Tablespoons
- Cilantro, chopped - 1 Tablespoon, packed
- Fresh squeezed lemon juice - 1 lemon
- Salt - about 1/4 teaspoon (to taste)
- Agave Syrup or sugar - 1 tablespoon (only if your tomatoes are acidic, taste first)
Directions:
- Combine everything except the salt and agave syrup.
- Taste and add the salt as needed.
- Add the agave syrup or sugar if the salsa is still acidic or tart.
- Refrigerate until ready to serve.

Mango Salsa – Serve on top of grilled fish, chicken, pork, in a taco, or with tortilla chips
Ingredients:
- Mango, Ripe, peeled and chopped - 1 Each
- Cilantro, chopped - 1 Tablespoon packed
- Red onion, finely chopped - 1-2 Tablespoons (to taste)
- Jalapeno pepper, seeded, minced - 1 teaspoon (more if you really like heat)
- Canola Oil – 1 Teaspoono
- Agave syrup or sugar- 1 Tablespoon
- Ground cayenne pepper – 1/8 Teaspoon
- Salt – to taste (about 1/4 teaspoon)
Directions:
- Combine all ingredients up to the salt.
- Taste and add salt as needed.
- You may increase the cayenne pepper for more heat.
- Refrigerate until ready to serve.
Guacamole Sauce – Best on grilled fish tacos, also good with chips
Ingredients:
- Avocado, ripe - 2 each
- Plain Yogurt - 1/2 Cup
- Fresh Squeezed Lemon Juice - 1 Lemon
- Ground Cayenne Pepper - 1/8 teaspoon (more for spice as needed)
- Tomato, chopped - 2 plum or 1 garden tomato
- Salt - 1/8 to 1/4 teaspoon
Directions:
- Set aside 1/2 an avocado.
- Combine the remaining avocado with all ingredients, up to the tomato, in a blender.
- Pulse until desired consistency (chunky or smooth).
- Remove and stir in tomatoes.
- Add 1/8 teaspoon salt, taste, and adjust seasoning with more salt as needed.
- Slice the remaining 1/2 an avocado and serve on top of the guacamole sauce.
- Refrigerate until ready to serve.
- NOTE- The guacamole will turn a more brownish-green due to oxidation when it sits. The closer to serving you make this, the better the color.
